    先來說說這本神奇的菜譜——《中國(guó)食譜 - How to cook and eat in Chinses》,作者楊步偉。
    菜名和菜譜
    這本菜譜兼容南北,既有大肉也有小菜,面食,火鍋,大部分都是尋常家里飯桌上能見到的。也有"炒蒲公英","漲蛋","橘羹"這些我聞所未聞的。
    這些菜譜詳細(xì)到所有配料的精確配比,分量,解釋起飲食習(xí)俗來也深入淺出,這是中國(guó)人所不習(xí)慣的表達(dá)方式,卻也是它能在西方迅速被接受的重要原因。
    另外,值得一提的是,書里的示意圖很像老教科書里的生物解剖圖,但因?yàn)榻忉尩氖菨L刀切的技巧,握筷子的手勢(shì),顯得嚴(yán)謹(jǐn)又很可愛。正如胡適的預(yù)測(cè),stir-fry等詞在現(xiàn)在的中餐館和烹飪教材里隨處可見,卻沒想過最初的翻譯就出自這本書。
    一本風(fēng)靡美國(guó)70年的中國(guó)菜譜
    《中國(guó)食譜 - How to cook and eat in Chinese》,作者楊步偉。楊步偉,一個(gè)地道的中國(guó)女人。光緒十五年出生。小時(shí)候家里人叫她"小三少爺",調(diào)皮貪玩,她說自己天不怕地不怕就只怕鬼,和家里長(zhǎng)輩,私塾老師斗智斗勇,拔馬尾巴的毛,還打過黎元洪的屁股,十幾歲才換了女裝。后和趙元任結(jié)婚,育有一女。楊步偉當(dāng)過女校校長(zhǎng),后來赴日學(xué)醫(yī),加入過同盟會(huì),又創(chuàng)建醫(yī)院,開過飯館,又辦清華進(jìn)城的公交車,又做過手提包賣,后來相夫教子之余寫了很多書,其中還有一本風(fēng)靡歐美幾十年的中國(guó)菜譜。
    這本菜譜是在康奈爾的圖書館偶然被發(fā)現(xiàn)的。1945年出版時(shí)就是英文版,楊步偉說自己英文一般,這本書是自己寫中文版,女兒幫忙翻譯,丈夫修改而來的。
    她在前言介紹說自己也是伴著"優(yōu)雅的女人不進(jìn)廚房的觀念"長(zhǎng)大的,出國(guó)前甚至沒有打過一顆蛋,但因?yàn)榱魧W(xué)期間不喜歡日本菜才學(xué)了做菜。學(xué)習(xí)的方式就是 with an open mind and an open mouth (敢想敢吃敢問)。
    胡適作序時(shí)說,楊步偉和女兒一起創(chuàng)造的一些新詞或術(shù)語(yǔ),終于可以貼切地向外國(guó)人解釋中國(guó)烹飪技藝,比如"Stir-fry"(炒),"Meeting"(燴),"Plunging"(蘸),大膽預(yù)測(cè)的話,這也可能對(duì)英語(yǔ)詞匯產(chǎn)生重要的貢獻(xiàn)。
    賽珍珠作序說,作為一個(gè)不熟悉中國(guó)食材和飲食習(xí)慣的外國(guó)人(其實(shí)賽珍珠算大半個(gè)中國(guó)人),她通過這種結(jié)合了西方生活經(jīng)驗(yàn)的菜譜寫作方式,終于開始了解具體怎么烹飪中餐,和中餐烹飪技巧的精華所在。
    她還提名這本書參選諾貝爾獎(jiǎng),說這菜譜能促進(jìn)國(guó)際間的理解,而且認(rèn)為只有被底蘊(yùn)深厚的文化滋哺過,才能做出中國(guó)菜這樣細(xì)膩的佳肴。
    民國(guó)第一美食博主
    《How to cook and eat in Chinese》再版了二十多次,也被翻譯成十幾種語(yǔ)言。雖然今天的菜譜已經(jīng)不拘泥于圖片和文字,甚至不少美食教程視頻都拍的美輪美奐,但楊先生在我心里卻是當(dāng)之無(wú)愧的民國(guó)美食"博主"第一人。
    她說,"美國(guó)的烤栗子永遠(yuǎn)不好吃。有的裂口,有的太生,這是加熱不均勻且斷斷續(xù)續(xù)導(dǎo)致的。中國(guó)的栗子是在沙子里炒的。不斷攪動(dòng)熱沙子,這樣栗子四面八方的溫度都合宜。最后,栗仁又軟又香,像是烤得恰到好處的地瓜一樣。"
    胡適說,"她的幾百?gòu)埐俗V,正如這張用沙子炒栗子的菜譜一樣,是無(wú)數(shù)節(jié)儉樸素、心靈手巧的男女思考和嘗試的結(jié)晶。它們?nèi)缃癖粶?zhǔn)確地記錄在這里,是為了讓所有愿意思考和嘗試的人獲益并感到快樂。"
    下面翻譯摘錄部分她的總結(jié)。
    中餐的形式
    "我們習(xí)慣菜佐飯,和美國(guó)正好相反,而不是面包佐菜。中國(guó)小孩總是喜歡多吃菜少吃飯,就像美國(guó)人一樣,但其實(shí)多吃米飯才會(huì)被視作乖巧而有禮貌的行為。"
    "湖南,安徽等地通常習(xí)慣吃三餐,每餐都有白飯,其他地方早餐會(huì)更簡(jiǎn)單一些,比如把米煮粥,很多外國(guó)人去東方以前都沒吃過。還有一些地方習(xí)慣吃兩餐,兩餐之間會(huì)夾著幾次點(diǎn)心,晚上還會(huì)有宵夜。比如廣東的一些餐館就會(huì)以午茶做的好而出名。"

    "參加宴會(huì)的時(shí)候在別人夾了菜以后動(dòng)筷子才是禮貌的,主人為了避免禮讓尷尬可以在開餐的時(shí)候主動(dòng)給客人夾菜。"
    "飯后吃水果是歐洲傳來的習(xí)慣,中國(guó)人是習(xí)慣于在兩道菜之間吃水果的。"
    把中國(guó)展示給世界的人
    雖然只是一本食譜,賽珍珠卻說它值得諾貝爾獎(jiǎng),因?yàn)樗谝淮蜗到y(tǒng)地讓美國(guó)人知道了中國(guó)菜到底是什么味道。
    文化的沖擊浸透在生活的各個(gè)角落,味蕾的感受最能讓人記住。他們初到美國(guó),在接受西方異奇的同時(shí)用一種直接易懂的方式表達(dá)了一句--"這是我們的真故鄉(xiāng)味"。
    趙元任曾經(jīng)走遍大半個(gè)中國(guó)研究各地方言,后來又在加州大學(xué)伯克利分校教授中國(guó)語(yǔ)文和語(yǔ)言學(xué)。這本《中國(guó)食譜》在歐美各國(guó)流傳,是上世紀(jì)很多廚師,餐廳老板和家庭主婦的必讀書,去年還出版了中文譯本。把中國(guó)展示給世界的人還有好多好多,今天寫下這篇文章是為分享這本有意思的"中國(guó)味",也為向他們致敬。

    另,楊布偉的三本書里都有趙元任的批注,或補(bǔ)充或感慨,有時(shí)候他們一來二去還會(huì)在批注里斗嘴,在我看來是最默契的生活情趣。
    金婚的時(shí)候,楊步偉在慶祝宴上賦詩(shī):"吵吵鬧鬧五十年,人人都說好姻緣。元任今生欠我業(yè),顛倒陰陽(yáng)再團(tuán)圓。"趙元任也和詩(shī)一首:"陰陽(yáng)顛倒又團(tuán)圓,猶似當(dāng)年蜜蜜甜。男女平權(quán)新世紀(jì),同偕造福為人間。"
