拔絲香蕉 Candied Banana Fritter
    一、Ingredients
    原料
    * 500 g Banana (not too ripe)

    * Frying oil
    * 食用油
    * 30 g All-purpose flour
    * 30克 中筋粉
    * 20 g Cornstarch

    * 1 Egg, beaten
    * 1個(gè) 雞蛋,打散
    * 1 tsp Water
    * 1小勺 清水
    * 150 g Granulated sugar

    * 5 g Corn oil
    * 5克 粟米油
    二、Method
    做法
    1. In a bowl combine the egg, AP-flour, 10 grams cornstarch and water to form a smooth batter. Heat a frying pan half filled with oil till 180C/350F. Prepare a serving plate lightly greased with oil or butter.
    1. 取一盆,放入雞蛋,中筋粉,10克玉米淀粉以及水后攪拌成無粉粒的順滑面糊。炸鍋置爐,倒入一半左右的食用油,燒熱至180C/350F。準(zhǔn)備一個(gè)碟子,抹上少許油脂。
    2. Peel bananas, cut into 3 to 4 diagonalchunks and roll in 10 grams of cornstarch to coat. Dipinto the batter, making sure each piece is evenly coated. Low the coated banana pieces into the heated oil and deep fry them until golden in color. Remove and drain.
    2. 香蕉去皮切3或4件,拍上另10克玉米淀粉后,均勻掛上面糊。慢慢將它們放入燒熱的油鍋里炸至金黃色。撈出濾油。
    3. Heat 5 grams of oil in another clean skillet, add sugar and stir fry over low heat until the sugar dissolves and turns into a syrup. Turn off the heat and return the fried bananas into the syrup. Quickly and carefully mix them and plungeinto the prepared serving plate.
    3. 同時(shí)將5克油放到另一個(gè)小鍋,加入砂糖小火翻炒直到砂糖融化轉(zhuǎn)變成糖漿。關(guān)閉爐火,將炸好的香蕉放入糖漿內(nèi)迅速拌翻拌后倒入備好的盤碟。
