The name is derived from two Aztec Nahuatl words – ahuacatl (avocado) and molli (sauce). The trick to perfect guacamole is using good, ripe avocados. Check for ripeness by gently pressing the outside of the avocado. If there is no give, the avocado is not ripe yet and will not taste good. If there is a little give, the avocado is ripe. If there is a lot of give, the avocado may be past ripe and not good. In this case, taste test first before using.
    牛油果醬(鱷梨醬)是一種起源于墨西哥、由牛油果做成的蘸醬。它的名字guacamole,是由兩個阿茲特克(墨西哥及中美洲印第安人部落)文字組合而來:ahuacatl(avocado,牛油果)和molli(醬汁)。要做成完美的牛油果醬,最關(guān)鍵的是要使用優(yōu)良、成熟的牛油果。判斷牛油果成熟與否,只要輕輕按壓牛油果的表面。如果是硬的,那就是沒有成熟、也不會好吃。稍微有一點(diǎn)軟,那就是熟了。如果太軟,則代表熟過了頭、也不會好吃。如果過熟,在使用前要先嘗嘗是否可用。   Perfect Guacamole Recipe   完美牛油果醬   Ingredients   材料   2 ripe avocados   1/2 red onion, minced   1-2 serrano chiles, stems and seeds removed, minced   2 tablespoons cilantro (leaves and tender stems), finely chopped   1 tablespoon of fresh lime or lemon juice   1/2 teaspoon coarse salt   A dash of freshly grated black pepper   1/2 ripe tomato, seeds and pulp removed, chopped   2個成熟的牛油果   半個紅洋蔥,切碎   1-2個墨西哥小辣椒,除莖、去籽,切碎   2茶勺香菜(取葉和嫩莖),細(xì)細(xì)切碎   1茶勺新鮮的青檸或檸檬汁   半茶勺粗鹽   一把現(xiàn)磨黑胡椒   半個成熟的番茄,去籽、去汁,切碎   Method   步驟   1 Cut avocados in half. Remove seed. Scoop out avacado from the peel, put in a mixing bowl.   1. 牛油果切兩半,去籽。用勺子把果肉挖出來、放到一個大碗里。   2 Using a fork, roughly mash the avocado. (Don't overdo it! The guacamole should be a little chunky.) Add the chopped onion, cilantro, lime or lemon, salt and pepper and mash some more. Chili peppers vary individually in their hotness. So, start with a half of one chili pepper and add to the guacamole to your desired degree of hotness.   2. 用叉子把牛油果搗碎。(注意不要搗的太碎,牛油果醬里的牛油果應(yīng)該是小碎塊狀的)加入切碎了的洋蔥、香菜、檸檬汁、鹽和胡椒,繼續(xù)混合攪拌。因?yàn)槔苯返睦倍雀髯圆煌?,放的時候先放一個、再根據(jù)自己的口味慢慢加。   Remember that much of this is done to taste because of the variability in the fresh ingredients. Start with this recipe and adjust to your taste.   記得所有這些步驟都要邊嘗邊試,你可以用這個菜譜開始、再調(diào)節(jié)到你喜歡的口味。   3 Cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air reaching it. Refrigerate until ready.   3. 用保鮮膜覆蓋好、以免氧化。放入冰箱備用。   4 Just before serving, chop the tomato, add to the guacamole and mix.   4. 上桌前將番茄切碎、加入牛油果醬。
