    An Old Legend about Cheese
    No one knows who made the first cheese,
    but an old legend says that it was an Arabian merchant.
    He put his milk in a pouch made from a sheep's stomach
    and set off across the desert.
    The jouncing of his camel, the desert heat,
    and the chemicals in the pouch made the milk separate into curds and whey.
    The thick part,or curd,was the first cheese.
    Ancient records show that cheese has been eaten for more than four thousand years.
    From earliest times it has been considered a very nourishing food.
    Americans eat less cheese than people in some countries do,
    yet they still consume eight to ten pounds a year per person.
    Today cheese is made all over the world. Most cheese is made from cow's milk,
    but supply of this milk is greater throughout the world.
    Smaller quantities come from the milk of other animals--goats,sheep,camels and even reindeer.

    一個關(guān)于奶酪的古老傳說
    沒有人知道誰制成了第一塊奶酪,
    但是一則古老的傳奇故事說,一位阿拉伯商人制成了第一塊奶酪。
    他把牛奶放在用羊胃做成的袋里,
    動身穿過沙漠。
    駱駝的搖動,沙漠的灼熱,
    以及袋中的化學(xué)物質(zhì)使牛奶離析成凝乳和乳清。
    這稠的部分,或者說凝乳,便是第一塊奶酪。
    古老的記載表明,人們食用奶酪已有4000多年的歷史了。
    從遠(yuǎn)古的時(shí)代起,它就被看成是營養(yǎng)豐富的食品。
    美國人比其他國家的人吃奶酪要少些,
    然而,每人一年仍要消耗八到十鎊奶酪。
    今天,世界各地都制造奶酪了,大部分奶酪是用牛奶做的。
    但是在全世界,這種奶酪的供應(yīng)量較大。

    Discovery
    The word"discovery" literally means,
    uncovering something that's hidden from view.
    But what really happens is a change in the viewer.
    The familiar offers comfort few can resist,
    and fewer still want to disturb.
    But as relatively recent inventions such as the telescope and microscope have taught us,
    the unknown has many layers.
    Every truth has geological strata,
    and you can't have an orthodoxy without a heresy.
    The moment a newborn opens its eyes, discovery begins.
    I learned this with a laugh one morning after delivering a calf.
    When it lifted up its fluffy head and looked at me,
    its eyes held the absolute bewilderment of the newly born.
    A moment before it had the even black nowhere of the womb,
    and suddenly its world was full of colour,movement and noise.
    I've never seen anything so shocked to be alive.

    發(fā)現(xiàn)
    "發(fā)現(xiàn)"一詞,字面上是指,
    揭開某種實(shí)現(xiàn)以外的隱藏的事物。
    不過其實(shí)是觀察者自身發(fā)生了變化。
    很少人能抗拒熟悉事物帶來的舒適,
    愿意擾亂這種舒適的人更少。
    然而,正如這些較為近期的發(fā)明望遠(yuǎn)鏡,顯微鏡揭示給我們的一樣,
    未知事物具有多種層次。
    每個事實(shí)都有地質(zhì)層次。
    沒有異端就無所謂正統(tǒng)。
    新生兒睜開雙眼的那一刻起,發(fā)現(xiàn)也就開始了。
    我是在一天清晨給一頭小牛犢接生的時(shí)候突然意識到這一點(diǎn)的,不禁大笑。
    小牛揚(yáng)起毛茸茸的腦袋看著我,
    目光中透出這個新生命對世界的一無所知。
    片刻之前,它還呆在母體里某個黑暗而平靜的地方,
    突然,它的世界變得五光十色,變得活潑而喧鬧。
    我從未見過任何東西在獲得生命時(shí)是如此的驚異。
